You can create the borders in VeSys 2.0 Symbols. Create a new library by selecting the type as border or open your existing border library and create a new border.
For the new border define the paper size as custom and specify the width and height.
Amit is absolutely correct, but as a second option, have you tried splitting your diagram in 2? VeSys allows you so share devices and wires across multiple diagrams on the same design with absolutely no cost.
This would allow you you keep your design a lot more readable.

I appreciate it is possible to split a Design across different sheets but are there any contraints that would prevent a user from creating a large schematic within one drawing? Are there any guidelines on maximum recommended drawing size? I don't have a requirement for this but it would be useful to note for future reference
I have seen some customers create fairly large schematics on a single sheet, in fact if my memory serves me correctly one customer printed it out and had it stuck in the Rear of the cab of the vehicle.
