I don't think you can.
However in your picture it is possible to change the graphic for the pin from male to female without loosing your properties by right-clicking on the pin > Properties > Attributes tab > Pin Graphic
In the Style Sets, I have changed the appearance of the plug-connector. I have added a `DIN-female'-fork as a symbol to the Plug Connector Pin style set.
Now when I add a Plug-connector to a design it has the appearance of a Receptacle (female) connector. And it connects to a device.
After adding a library part to a connector, changing the pin graphic is not possible (by right-clicking on the pin > Properties > Attributes tab > Pin Graphic)
Also, a previously chosen pin graphic dissapears after adding a library part.

You can define the cavity attribute for the connector as male or female as shown in the image in Capital Library. (2-16-2010 3-39-27 PM.png)
Add the connector on the design will pick the pin graphics. attached images (2-16-2010 3-39-38 PM.png)

Was browsing the forum for some answers.
We just upgraded to Vesys 2.0 July 2010. In component maintenance tab "cavity attributes" is not there anymore. Any suggestions on that?

This may be because of the Configure library GUI in 10.1. to get back the cavity attributes you click on tools > configure Library GUI this will open the configure library GUI and where you can make the tabs visible.
Library > Connector > Tab pages > RMB and select cavity attributes.
